Makes: 6 servings adjust
A jazzy version of a classic breakfast treat.

  • 2 Eggs, beaten
  • 1 cup Milk
  • 1 teaspoon Vanilla Extract
  • 12 Nutmeg, freshly-grated if at all possible! The flavor difference is enormous!

Step 1

Combine the eggs, milk, vanilla, and nutmeg in a low, wide bowl that the bread slices will fit into.

Step 2

Lightly butter a large skillet. I prefer non-stick but that's not critical.

  • 6 slices French Bread, left out overnight to go stale (or put into oven on lowest setting for about 15 minutes per side)

Step 3

Dip a slice of bread into the egg mixture. Flip it 3 times. Place immediately into hot, buttered skillet. Cook over medium heat until browned. Flip and cook other side until browned. Transfer to a plate in the oven, on lowest setting, and cover with a tea-towel to hold hot until ready to serve. Repeat for all slices.

Step 4

Serve with a little butter or spread and top with your choice of maple (or other) syrup, powdered sugar (my personal favorite), or even fresh fruit or fruit preserves. With fruit, a little whipped cream is a nice touch.
