*Kidney Bean, Cabbage, and Feta Salad

"Cabbage is one of those veggies that requires some creativity, in my opinion. One head of cabbage can go a long way. When you cut it, it just expands, so you need to have a few recipes in mind when you get one head of cabbage. Next time you have cabbage on hand, try this low glycemic salad. I know you�ll love it!! I have to be honest, I wasn�t so sure about it when I first saw it. I had NEVER had cabbage as the basis of a salad before and I had never tried Feta cheese before. CRAZY, I know! Now I LOVE Feta cheese. It�s my favorite. Your kids might not care for it, but the good thing is that it stays fresh for a few days, so make it for yourself, portion it out in lunch sized containers and it�s your perfect lunch for five days while the kids are off to school."



  • 1 can Canned Red Kidney Beans, rinsed and drained
  • 3 cups Cabbage, finely chopped
  • 1 Red Bell Pepper, chopped
  • 2 Green Onions, chopped
  • 12 cup Feta Cheese, cubed
  • 3 tablespoons Fresh Parsley, chopped

Step 1

In a salad bowl, combine beans, cabbage, red pepper, onions, feta cheese and parsley


  • 2 tablespoons Lemon Juice
  • 1 teaspoon Dried Basil, optional (I always add this)
  • 1 tablespoon Flax Seed Oil
  • 2 cloves Garlic, minced

Step 2

In a jar with a tight fitting lid, combine dressing ingredients and shake

Step 3

Pour dressing over salad and toss lightly.

Step 4

Cover and refrigerate until chilled.


  • Beef Pot Roast, leftovers, cooked, cut into 1/2 inch chunks

Step 5

Oh yeah, I forgot to mention, I topped my salad with leftover pot roast meat for some added protein. It was a perfect match!
