"Cabbage is one of those veggies that requires some creativity, in my opinion. One head of cabbage can go a long way. When you cut it, it just expands, so you need to have a few recipes in mind when you get one head of cabbage. Next time you have cabbage on hand, try this low glycemic salad. I know youll love it!! I have to be honest, I wasnt so sure about it when I first saw it. I had NEVER had cabbage as the basis of a salad before and I had never tried Feta cheese before. CRAZY, I know! Now I LOVE Feta cheese. Its my favorite. Your kids might not care for it, but the good thing is that it stays fresh for a few days, so make it for yourself, portion it out in lunch sized containers and its your perfect lunch for five days while the kids are off to school."

Directions

Ingredients

  • 1 can Canned Red Kidney Beans, rinsed and drained
  • 3 cups Cabbage, finely chopped
  • 1 Red Bell Pepper, chopped
  • 2 Green Onions, chopped
  • 12 cup Feta Cheese, cubed
  • 3 tablespoons Fresh Parsley, chopped

Step 1

In a salad bowl, combine beans, cabbage, red pepper, onions, feta cheese and parsley

Ingredients

  • 2 tablespoons Lemon Juice
  • 1 teaspoon Dried Basil, optional (I always add this)
  • 1 tablespoon Flax Seed Oil
  • 2 cloves Garlic, minced

Step 2

In a jar with a tight fitting lid, combine dressing ingredients and shake

Step 3

Pour dressing over salad and toss lightly.

Step 4

Cover and refrigerate until chilled.

Ingredients

  • Beef Pot Roast, leftovers, cooked, cut into 1/2 inch chunks

Step 5

Oh yeah, I forgot to mention, I topped my salad with leftover pot roast meat for some added protein. It was a perfect match!
