"Knock Your Socks Off" Manicotti

A healthy and surprisingly tasty Italian dish that even your couch potato will love! A healthy variation of Manicotti pasta with spinach and zucchini.

Directions

Ingredients

  • 1 pound Ground Turkey
  • 3 cloves Garlic, Finely Chopped
  • 3 tablespoons Italian Seasoning
  • 1 medium Onion, Finely Chopped

Step 1

Thoroughly cook ground turkey meat with Italian Seasoning. Once the meat is done, add garlic and onions, cook over medium heat for 5 minutes. Divide meat mixture in half, set aside 1/2 of mixture to add to sauce.

  • 2 packages Manicotti Pasta, Cooked and Drained

Step 2

Cook and drain pasta according to package instructions, then set aside to cool.

Ingredients

  • 1 medium Zucchini, Finely Diced
  • 10 ounces Frozen Chopped Spinach, Thawed and Rinsed
  • 6 ounces Black Olives, Drained and Chopped
  • 15 ounces Fat-Free Ricotta Cheese
  • 1 cup Fat-Free Mozzarella Cheese, Shredded
  • 14 cup Parmigiano Reggiano Cheese, Shredded

Step 3

In a large bowl, add the ingredients together and mix thoroughly. Combine the other half of the meat mixture with cheese mixture.

  • 48 ounces Spaghetti Sauce

Step 4

Preheat oven to 350 degrees. Combine your favorite spaghetti or marinara sauce with set aside half of meat mixture. Prepare 2 large casserole dishes and spread about 1/2 cup of spaghetti sauce onto each dish. Spoon filling carefully into each Manicotti pasta shell, using fingers to lightly pack. Line stuffed pasta into casserole dish, and then evenly cover with leftover spaghetti sauce.
 

Step 5

Cover prepared casserole dishes with aluminum foil, and bake in oven for 45-50 minutes. If desired, sprinkle additional Parmigiano cheese on top of stuffed pasta shells and sauce, and bake for an additional 5 minutes uncovered. Remove from oven, and let cool for 5 minutes before serving.
