*Laura's Amazing Split Pea Soup

  • 2 tablespoons Extra Virgin Olive Oil
  • 1 large Onion, chopped
  • 3 Carrots, chopped
  • 3 cloves Garlic, minced

Step 1

Saute onion, carrots, and garlic in the oil until fragrant and not overcooked.


  • 2 cups Green Peas, dried
  • 1 teaspoon Dried Thyme
  • 4 12 cups Vegetable Broth
  • 3 cups Water

Step 2

Add peas, thyme, broth, and water and bring to a boil. Reduce heat, cover, and simmer for 1-2 hours until peas are tender.


  • 1 pound Ground Turkey Sausage, cooked and crumbled
  • 1 12 teaspoons Black Pepper
  • 1 12 teaspoons Sea Salt

Step 3

Add cooked and crumbled turkey sausage the last 30-45 minutes of cooking. Mix slighly when ready to serve - some of the peas will mash together, giving it a thick and creamy texture. Add salt and pepper. Serve.
