Lemon Chicken Drumsticks

Simple down-home chicken legs with a zesty flavor.



  • 12 Chicken Drumsticks (Legs)

Step 1

Rinse the chicken and pat dry.


  • 2 teaspoons Lemon Zest
  • 14 cup Fresh Squeezed Lemon Juice, juice from 2 lemons
  • 2 tablespoons Fresh Thyme, chopped
  • 2 tablespoons Extra Virgin Olive Oil
  • Salt, to taste
  • Black Pepper, fresh ground, to taste

Step 2

Combine juice, lemon zest, thyme, olive oil, salt and pepper, in a large bowl. Add the drumsticks and toss to coat. Cover and refrigerate for 2 to 4 hours, or overnight.

Step 3

Preheat the oven to 375 degrees.

Step 4

Arrange the drumsticks in a shallow roasting dish to fit (use two dishes to avoid overcrowding). Pour any marinade over the chicken and bake, basting occasionally, until the drumsticks are cooked through and golden brown, about 1 1/4 hours.

Step 5

Serve on a bed of rice or orzo. Arrange drumsticks on top and pour chicken pan juices over. Serve immediately.
