Lemon Meringue Pie

This was my grandfather's favorite, always requested on his birthday.



  • 2 Lemons

Step 1

Grate rind off both lemons. Set aside. Juice the lemons and set juice aside.


  • 1 12 cups Sugar
  • 18 teaspoon Salt
  • 12 cup Cornstarch
  • 2 cups Water, boiling

Step 2

Combine in a sauce pan the sugar, salt, corn starch and the lemon rind reserved in step 1. Add boiling water and cook, stirring constantly, until mixture clears and thickens.


  • 4 Egg Yolks
  • 1 teaspoon Butter

Step 3

Add egg yolks, butter, and the lemon juice reserved in step 1. Cook about 5 minutes while stirring.


  • 4 Egg Whites
  • 12 teaspoon Baking Powder
  • 12 cup Sugar

Step 4

Make soft meringue by beating egg whites. As they start to stiffen, add baking powder and sugar. Continue to beat until stiff.

Step 5

Place lemon mixture into baked pie crust shell. Spread meringue across whole top of pie, touching the meringue to the edges of the crust to form a seal.

Step 6

Bake 12-15 minutes at 375-degrees until meringue just starts to turn golden on tips.
