Loaded Chicken & Potatoes

Step 1

Preheat oven to 400. Spray a 9x13 pan with cooking spray.


  • 13 cup Olive Oil
  • 1 12 teaspoons Salt
  • 1 teaspoon Black Pepper
  • 1 tablespoon Paprika
  • 2 tablespoons Garlic Powder
  • 2 tablespoons Hot Sauce, to taste

Step 2

In a large bowl mix together well.


  • 1 pound Boneless Skinless Chicken Breast
  • 8 medium Red Potato, cut into 1/2" cubes

Step 3

Add to spice mixtyre and mix well to coat. Scoop into 9x13 pan.

Step 4

Cook for 55-60 minutes stirring every 20 minutes until cooked through, crispy, and browned on the outside.


  • 1 cup Bacon, crumbled

Step 5

While potatoes are cooking fry then crumble bacon.


  • 2 cups Fiesta Blend Cheese
  • 1 cup Green Onion, diced

Step 6

Once potatoes and chicken are fully cooked, remove from oven and top with cheese, bacon and onion. Return to oven and bake for 5 minutes or until cheese is melted.
