Loaded Twice-Baked Potatoes

Twice-baked potatoes with bacon and scallions.



  • 4 Baking Potatoes, pierced with fork

Step 1

Pierce potatoes with fork and bake at 400-degrees for one hour or until tender.

Step 2

Cool potatoes slightly, cut in half lengthwise, and hollow out halves, leaving 1/4-inch thick shells. Place potato pulp in mixing bowl.


  • 12 cup 1% Lowfat Milk
  • 13 cup Reduced Fat Cream Cheese
  • 12 cup Feta Cheese, crumbled
  • 2 tablespoons Fresh Oregano, minced
  • 12 teaspoon Salt
  • 14 teaspoon Fine Ground Black Pepper

Step 3

Mash potato pulp and mix in following ingredients.

Step 4

Scoop potato mixture back into shells. Place potato halves on baking sheet and bake at 400-degrees for 15 minutes.


  • 2 strips Bacon, cooked and crumbled
  • 14 cup Scallion, sliced thinly

Step 5

Top with bacon and scallions.
