Loaded Veggie Sandwich

  • 2 slices Sprouted-grain Toast
  • Mustard, Almonaise, Mashed Avocado, or Hummus
  • 1 large Round Tomato, sliced
  • 1 large Cucumber, peeled and sliced lengthwise into 4 thick slices
  • 2 large Onion Slices
  • Lettuce, Spinach, or Sprouts

Step 1

Spread toast with choice of mustard, mashed avocado, and/or hummus. Pile high with veggies and serve open-faced. (be sure to have napkins handy!)
