Manicotti Shells

Manicotti Shells

Super light and delicious crepes for manicotti. Just place your favorite filling at one and and roll it up like a burrito. So much easier than trying to stuff manicotti shells with filling.



  • 5 Eggs
  • 34 cup Water
  • 34 cup Seltzer, or club soda or plain water
  • 14 teaspoon Kosher Salt, if using table salt, cut amount in half
  • 1 12 cups All-Purpose Flour

Step 1

In a medium size bowl, beat the eggs. Stir in water, seltzer, salt and flour to make a thin, smooth batter. Should be the consistency of very thin pancake batter. Add a very small amount of additional water if batter is too thick.

Step 2

Set batter aside to rest for at least 30 minutes.

Step 3

Heat a 8-inch non-stick pan over medium heat. Pick up the pan and add 1/4 cup batter quickly swirling the pan to form a thin, even coating of batter. Cook until crepe looks dry on the top. Flip and briefly cook the other side. Remove to a paper towel and repeat with remaining batter. Note: Crepes will not be brown just a very light tan.
