Maple-Flavored Barbecue Chicken

This crockpot recipe can be made ahead and frozen. I mix all ingredients in a plastic zip-top bag and freeze. (Make sure chicken is covered with sauce to help prevent freezer burn.) When needed, remove bag (run under hot water for a few seconds and it will slide off easily), drop in crockpot, and cook. I usually let it cook while I am away at work, for about 10 hours or so - which is longer than the time listed in the recipe. Weight Watchers Points = 12.5 points for entire sauce recipe, sans chicken.

Ingredients

  • 4 Boneless Chicken Breasts, skinned
  • 14 teaspoon Garlic Powder
  • 12 teaspoon Chili Powder
  • 2 teaspoons Fresh Lemon Juice
  • 2 tablespoons Worcestershire Sauce
  • 2 tablespoons Prepared Mustard
  • 12 cup Maple-Flavored Syrup, (I use real maple syrup)
  • 1 cup Ketchup

Step 1

Place all ingredients in a crockpot and cook on low for 7 to 8 hours.
 

Step 2

Remove meat and shred with forks. Return to sauce. Place on buns for sandwiches or serve over rice.
