Marbled Chocolate Raspberry Cookies

Marbled Chocolate Raspberry Cookies

Directions

 

Step 1

Preheat oven to 350 degrees. Line cookie sheet with cilacone mats.

Ingredients

  • 6 ounces Raspberries, whole, 1 1/4 cups
  • 2 tablespoons Sugar

Step 2

Raspberry Dough: place raspberries and 2T sugar in a small saucepan and cook on medium, stirring constantly, until berries have broken apart. Cook until mixture darkens & thickens, about 5 minutes. Remove from heat and let cool.

Ingredients

  • 2 34 cups Flour
  • 12 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 12 teaspoon Salt

Step 3

Place flour, baking soda, baking powder and salt in mixing bowl. Whisk vigorously to evenly blend. Set aside.

Ingredients

  • 6 tablespoons Butter, 3/4 stick, softened
  • 14 cup Cream Cheese
  • 1 12 cups Sugar

Step 4

Place the butter, cream cheese and sugar into a mixing bowl. Mix on medium speed until light and fluffy, about 3 minutes.

Ingredients

  • 1 Lemon, zest
  • 1 large Egg
  • 1 large Egg Yolk

Step 5

Add lemon zest and egg, beat on medium speed until incorporated. Repeat with egg yolk, then cooled raspberry jam.
 

Step 6

Add the dry ingredients to the batter and turn the mixer on low, until dough starts to absorb some of the dry ingredients. Increase the speed to medium until dough is fully incorporated. Remove dough and set aside.

Ingredients

  • 2 cups Flour
  • 1 cup Unsweetened Cocoa Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt

Step 7

Chocolate Cookie Dough: place flour, cocoa powder, baking soda and salt in another bowl. Whisk vigorously to evenly blend. Set aside.

Ingredients

  • 12 tablespoons Butter, 1 1/2 stick, softened
  • 12 cup Cream Cheese, softened
  • 1 cup Sugar
  • 1 cup Brown Sugar

Step 8

Place butter, cream cheese, sugar and brown sugar in bowl (you can use the same bowl from the raspberry cookies without cleaning it). Mix on medium speed until light and fluffy, about 3 minutes.

Ingredients

  • 1 large Egg
  • 1 large Egg Yolk
  • 1 tablespoon Vanilla Extract

Step 9

Add the egg and beat on medium speed until incorporated. Repeat with egg yolk, scrape the bowl down and then add vanilla.
 

Step 10

Add dry ingredients and mix on low, until dough starts to absorb dry ingredients. Increase to medium until fully incorporated.
 

Step 11

Pinch off 1 tablespoon of chocolate dough and roll it into a ball. Repeat with another teaspoon of chocolate dough. Do the same for the raspberry dough. You should have 4 balls of dough. Stack them in your hands, alternating chocolate - raspberry - chocolate - raspberry, and smoosh together and roll into a ball. The ball should look like marbled dough.

Step 12

Roll dough in sugar and place on cookie sheet. Place cookies 2" apart. Bake for 13-15 minutes or until edges of raspberry part look golden. Let cool for 5 minutes then place onto cooling rack.
