Marinated Porterhouse Steak

Technically, "Bistecca alla Fiorentina", this is a Tuscan preparation.

Directions

Ingredients

  • 1 Lemon

Step 1

Cut lemon in half. Juice one half and reserve for marinade. Cut other half into wedges and reserve for garnish.

Ingredients

  • 2 pounds Porterhouse Steak, one steak
  • 2 teaspoons Fine Sea Salt
  • 1 12 teaspoons Fine Ground Black Pepper

Step 2

Season steak strongly with salt and pepper. This will be more salt and pepper than you might ordinarily use.

Ingredients

  • 2 tablespoons Red Wine, dry
  • 2 cloves Garlic, finely chopped or pressed

Step 3

Mix red wine, garlic, and lemon juice reserved in step one.

Ingredients

  • 1 cup Olive Oil

Step 4

Slowly add olive oil to red wine mixture, whisking briskly to thicken marinade.
 

Step 5

Marinade steak at least 12 hours with marinade in shallow glass or ceramic dish. Turn steak occasionally.
 

Step 6

Grill steak to desired doneness. Cover with foil and let rest five minutes. Cut steak from bone into desired number of servings. Garnish with lemon wedges.
