Mexican Quinoa Stuffed Peppers

Directions

Ingredients

  • 4 large Green Pepper

Step 1

Cut peppers in half, destem and seed.

Ingredients

  • 34 cup Quinoa

Step 2

Cook quinoa as directed on package.

Ingredients

  • 1 pound Ground Beef, any mix of meat. i used chorizo, sausage and beef.

Step 3

Brown ground beef.

Ingredients

  • 15 ounces Canned Black Beans
  • 1 cup Frozen Corn, thawed
  • 2 Green Onions

Step 4

Rinse beans, thaw corn and slice green onions.

Ingredients

  • 23 cup Salsa
  • 1 12 teaspoons Ground Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Chili Powder

Step 5

In a large bowl add together cook quinoa, and all other ingredients except green peppers. Combine and adjust taste if necessary.
 

Step 6

Preheat oven to 350.
 

Step 7

In a lightly sprayed baking dish place pepper halves and generously stuff them with quinoa filling, pressing lightly to fill nooks and crannies.
 

Step 8

Cover with foil and bake for 35-40 minutes, remove foil then cook for another 10 minutes.
