Mexican Turkey Meatloaf

Healthy, spicy twist on meatloaf

Directions

 

Step 1

Preheat oven to 350 degrees

Ingredients

  • 13 cup Apricot Jam
  • 1 cup Ketchup
  • 1 tablespoon Chipotle Pepper, Chopped finely. If you prefer less spice then just add the sauce from the can and none of the pepper.

Step 2

Making the glaze - Add the ketchup, Apricot jam, and chipotle peppers in a mixing bowl and mix well. Set aside.

Ingredients

  • 10 Baby Carrots, Chopped finely
  • 1 Bell Pepper, Any color pepper you want. I usually use half of a red and half of a green or yellow (for color).
  • 12 White Onion, Medium sized onion. Chopped finely.

Step 3

Saute all of the finely chopped vegetables in a pan until the onions just start to brown.

Ingredients

  • 1 pound Ground Turkey
  • 2 Eggs, Beaten
  • 12 package Fajita Seasoning, Taco seasoning will work if you don't have Fajita Seasoning
  • 34 cup Panko Bread Crumbs, Regular bread crumbs will work if you don't have Panko.

Step 4

Mix all of the rest of the ingredients into bowl. Add the sauteed vegetables and mix well.
 

Step 5

Place the mixture into a greased loaf pan. Spread 1/2 of the glaze across the top of the loaf.
 

Step 6

Bake for 45-55 minutes or until the loaf is no longer pink in the middle.
 

Step 7

Cut into 1'' pieces and glaze with the extra sauce.
