  • 26 12 pounds Tomatoes, peeled and quartered
  • 2 Hot Red Peppers
  • 2 Hot Green Peppers
  • 10 Anaheim Peppers
  • 7 Jalepenos
  • 5 medium Onion
  • 12 cloves Garlic

Step 1

Blend the tomatoes, peppers, jalepenos, onion, and garlic in food processor to liked consistency. *A simple way to peel tomatoes is to blanch them: boil a pot of water on the stove. Place tomatoes in the boiling water for a few minutes until their skins break open. Drain and cool. The peels slip right off.*


  • 12 cup Salt, to taste, could use more
  • 1 tablespoon Oregano
  • 4 tablespoons Cumin
  • 12 cup Sugar
  • 1 12 cups Cider Vinegar
  • 24 ounces Canned Tomato Paste
  • Tomatillo, optional
  • 14 cup Lime Juice

Step 2

Add salt, oregano, cumin, sugar, cider vinegar, canned tomato paste. Add tomatillos and lime juice if desired. Simmer salsa 3 to 4 hours. Place in jars and process in a water bath canner.
