Directions

Ingredients

  • 1 tablespoon Olive Oil
  • 1 cup Onion, chopped
  • 4 Celery Ribs, chopped (about 2 cups)
  • 3 Garlic Cloves, minced
  • 12 teaspoon Dried Basil
  • 12 teaspoon Dried Thyme

Step 1

Heat oil in a large soup pot. Add the onion, celery, garlic, basil and thyme, and cook, stirring occasionally, until onion is soft and translucent, 4 to 5 minutes

Ingredients

  • 6 cups Reduced Sodium Chicken Broth
  • 1 can Diced Tomatoes, 14 oz can
  • 14 cup Ditalini Pasta
  • 1 box Frozen Peas and Carrots, (10 - ounce) thawed
  • 2 cups Red Beans, cooked or 2 cans, drained

Step 2

Add the broth and tomato and bring to a boil. Stir in the ditalini, reduce heat to simmer and add the peas and carrots and red beans; simmer 20 minutes.

Ingredients

  • 1 pound Zucchini, cut into 10inch pieces
  • Grated Parmesan Cheese

Step 3

Add zucchini and cook 10 minutes longer. Ladle into bowls and sprinkle with Parmesan cheese
