Misty's Healthy Shrimp Alfredo

  • 1 12 tablespoons Extra Virgin Olive Oil
  • 34 cup Carrot, diced and shredded
  • 3 Garlic, thinly sliced and diced

Step 1

Heat oil in frying pan and put in garlic and carrots. Cook over medium/high heat until fragrant.


  • 1 cup Fat-Free Sour Cream
  • 1 cup Nonfat Evaporated Milk
  • 3 Roma Tomato, diced
  • 13 cup Green Onion, optional

Step 2

Add sour cream, evaporated milk, and plum tomatoes and green onions (if you like onions). Lower heat and cook over medium heat, making sure not to burn.


  • 34 pound Shrimp, cooked, deveined and tails removed
  • 13 cup Fresh Basil, chopped
  • Ground Black Pepper, to taste
  • Salt, to taste
  • Whole Wheat Pasta
  • Shredded Parmesan Cheese

Step 3

Prepare your favorite whole wheat pasta, or your favorite veggies while this simmers. Add fresh basil and shrimp last. Let simmer 5-10 minutes on low, adding more evaporated milk if too thick. Salt and pepper to taste...Add pasta or veggies and thoroughly mix together...Sprinkle a little shredded parmesan cheese...
