Mushroom Sandwiches

Classic passed appetizer, you'll feel like you're at an old time catered event.

Directions

Ingredients

  • 12 pound Fresh Mushrooms, finely diced
  • 1 tablespoon Butter

Step 1

Finely dice mushrooms, or use food processor and pulse until finely diced, roughly 1/4" pieces.
 

Step 2

Saute mushrooms in 1 tablespoon of butter. Drain and save broth. Set aside.

Ingredients

  • 12 teaspoon Pepper
  • 12 teaspoon Fresh Lemon Juice
  • 12 teaspoon Salt
  • 14 cup Milk
  • 4 teaspoons Butter
  • 4 teaspoons Flour

Step 3

Make cream sauce by sautéing butter and flour, whisking in milk until creamy. Add seasonings, mushrooms, and reserved broth.

Ingredients

  • 12 slices White Bread, very thin (1/4"), crusts removed
  • 4 tablespoons Butter, softened for spreading.

Step 4

Butter one side of 6 pieces of bread. Place butter side down and divide mushroom mixture across 6 sandwiches. Spread mushroom to very edge. Butter one side of remaining 6 pieces of bread and place butter side up on top of mushroom mixture. Cut each sandwich into 4 squares and arrange on cookie sheet.
 

Step 5

Bake at 425-degrees for 5 minutes, watching closely, until golden brown. There's no need to turn, but they can burn quickly. Serve immediately.
