Mustard-glazed Salmon with Cannellini Beans, Lemon & Rocket

Lighten up your fish supper with a beany salad. Great value and great flavours

Directions

Ingredients

  • 1 tablespoon Honey
  • 1 tablespoon Grainy Mustard
  • 1 Lemon, zested & juiced

Step 1

Mix the honey and mustard with a splash of lemon juice and seasoning, then marinate the salmon in it for a couple of minutes.

Ingredients

  • Olive Oil
  • 1 Garlic Clove, crushed
  • 400 grams Canned Cannellini Beans, rinsed & drained

Step 2

Heat 2 tbsp olive oil in a small pan, add the garlic and cook gently for 3-4 minutes. Add the beans and warm through. Add the rest of lemon juice and the zest and season.

Ingredients

  • 2 Salmon Fillets, skinless
  • 50 grams Rocket

Step 3

Grill the salmon for 7-8 minutes until just cooked through (no need to turn over). Toss the beans with the rocket and serve with the salmon.
