Nancy's Lasagna

Delicious veggie pasta dish. REheats well.



  • 1 box Lasagna Noodles, Prepare per box directions

Step 1

Prepare the noodles. Let drained noodles sit in cold water for 5 minutes


  • 1 pound Ground Beef
  • 1 tablespoon Olive Oil
  • 2 cloves Garlic

Step 2

Brown meat and garlic in olive oil.


  • 8 ounces Tomato Paste
  • 1 can Crushed Italian Tomatoes

Step 3

Add tomato sauce and tomato paste, plus seasonings you have on hand like salt and pepper.


  • 2 Eggs, slightly beaten
  • 1 can Ricotta Cheese
  • 1 can Cottage Cheese, Nancy adds half of a large carton
  • 14 cup Parmesan Cheese
  • 1 teaspoon Kosher Salt, and pepper

Step 4

Combine ingredients for filling.


  • 1 pound Mozzarella Cheese

Step 5

Place sauce in bottom of pan in a thin layer. Spread noodels on top. Add filling. Add mozzarella. Repeat layers. Bake uncovered at 350 for 30 minutes or until cheese is bubbly.
