Nancy's Veggie Chili

David's favorite vegetarian chili recipe.



  • 8 ounces Fresh Mushrooms, Sliced
  • 1 Green Bell Pepper, Cut into bite-sized chunks
  • 1 Onion, Half a medium onion
  • 2 cloves Garlic, Diced

Step 1

Add sliced mushrooms, chopped green pepper, onion and garlic to chili pot. Brown in olive oil


  • 28 ounces Diced Roasted Tomatoes
  • 8 ounces Tomato Sauce
  • 1 cup Red Wine
  • 2 tablespoons Chili Powder
  • 1 tablespoon Dried Whole Oregano
  • 1 teaspoon Cumin Seed

Step 2

Once browned, add tomatoes, tomato sauce, wine, oregano, chili powder and cumin

Step 3

Bring to a boil. Reduce and simmer for 45 min


  • 8 ounces Canned Dark Kidney Beans
  • 1 Zucchini, chopped

Step 4

Add beans and zucchini. Simmer for 10 more minutes, then let cool for 20 minutes before serving

Step 5

Garnish with sour cream and cheese. Talk smack about how good your chili is to all of your vegetarian friends. Prepare to fart alot.
