Northwest Apple Ginger Crisp

Directions

 

Step 1

Prep: Soften butter. Lightly toast almonds. Chop candied ginger. Peel and slice apples.
 

Step 2

Preheat oven to 375F.

Ingredients

  • 1 14 cups Old Fashioned Rolled Oats
  • 1 cup Light Brown Sugar
  • 1 tablespoon All-Purpose Flour
  • 34 teaspoon Ground Cinnamon
  • 14 teaspoon Salt
  • 34 cup Unsalted Butter, at room temperature
  • 1 cup Chopped Almonds, lightly toasted
  • 12 cup Candied Ginger, (or, chopped crystallized ginger) - optional

Step 3

To prepare the topping, combine oats, brown sugar, flour, cinnamon and salt in a bowl. Add butter and rub in until coarse crumbs form. Stir in almonds and ginger.

Ingredients

  • 8 Granny Smith Apples, peeled, cored, thinly sliced
  • 2 cups Dried Cherries
  • 12 cup Sugar
  • 1 tablespoon Lemon Juice
  • 34 cup All-Purpose Flour
  • 12 teaspoon Ground Cinnamon

Step 4

To prepare the filling, combine apples, cherries, sugar, lemon juice, flour and cinnamon in a bowl and mix well.
 

Step 5

Divide the filling among 12 buttered 1 1/4-cup ramekins. Spread the topping over the apples.
 

Step 6

Bake for 35-40 minutes, or until the topping is golden brown.

Ingredients

  • Vanilla Ice Cream, or fresh whipped cream

Step 7

Serve warm with fresh whipped cream or vanilla ice cream. Makes 12 servings.
