Oaxacan Chicken Mole

  • 2 Boneless Skinless Chicken Breasts
  • 1 12 tablespoons Olive Oil
  • 1 teaspoon Chili Powder

Step 1

Season chicken with 1 tsp chili powder. Heat oil in med skillet over med high heat. Add chicken; cook until brown, about 2 minutes per side.


  • 12 teaspoon Cumin
  • 14 teaspoon Ground Cinnamon
  • 2 12 teaspoons Chil Powder

Step 2

Add remaining 2 1/2 tsp chili powder, cumin & cinnamonto skillet. Stir 15 seconds.


  • 1 can Stewed Tomatoes
  • 14 ounce Unsweetened Chocolate

Step 3

Mix in tomatoes & chocolate; simmer until sauce thickens, about 5 minutes.

Step 4

Return chicken to sauce is just cooked through, about 4 minutes.
