Oil Free Jerked Chicken

  • 3 pounds Boneless Skinless Chicken Breast
  • 2 Limes, juice only

Step 1

Put chicken and lime juice in a ziplock bag and set aside.


  • 2 tablespoons Dried Ground Thyme
  • 1 tablespoon Dried Ground Rosemary
  • 1 tablespoon Ground Allspice
  • 2 inches Fresh Ginger, peeled
  • 1 12 tablespoons Pink Salt
  • 1 12 teaspoons Onion Powder
  • 1 12 teaspoons Ground Black Pepper
  • 1 12 teaspoons Ground Cinnamon
  • 34 teaspoon Ground Nutmeg
  • 34 teaspoon Garlic Powder
  • 34 teaspoon Paprika
  • 1 teaspoon Crushed Red Pepper Flakes, or more to taste
  • 12 Bay Leaves, finely crumbled
  • 2 tablespoons Stevia, powdered

Step 2

Combine spice mixture well in a bowl.

Step 3

Cover the chicken well with spice mixture, getting as much as possible to stick to chicken.

Step 4

Refrigerate 3-24 hours. remove and let come to room temperature.

Step 5

Grill chicken over hot direct fire. dont worry about the black, it's supposed to be there the chicken isn't burnt.

Step 6

Once seared, remove to the indirect side of the grill cook to internal temp of 165.
