Old Fashion Beef Vegetable Soup

  • 1 whole Beef Pot Roast, cooked in crock pot

Step 1

Cook roast in slow cooker. When cooled enough to handle shred the roast and reserve the cooking liquid.


  • 10 cups Water
  • 3 tablespoons Beef Bouillon
  • 1 12 teaspoons Salt
  • 12 teaspoon Pepper
  • 12 teaspoon Dried Thyme
  • 2 leaves Bay Leaf

Step 2

In 8 qt stockpot stir boullion into water, add reserved cooking liquid from roast. Add spices and shredded beef, bring to boil. reduce heat; cover and simmer 2-2.5 hrs longer.

Step 3

Remove bay leaves.


  • 4 cups Tomato-Vegetable Juice
  • 3 cups Potatoes, cubed
  • 3 cups Cabbage, coarsely chopped
  • 2 cups Frozen Pearl Onions
  • 2 cups Frozen Cut Green Beans
  • 4 medium Carrot, 2" slice

Step 4

Stir in all remaining ingredients. Heat to a boil. reduce heat, cover and simmer 30 minutes or until vegetables are tender.
