Old Time Chicken And Biscuits

Homey and old-fashioned, this comforting dish can be on the table in a flash, thanks to store-bought rotisserie chicken.



Step 1

Preheat oven to 450 degrees.


  • 2 14 cups Bisquick
  • 23 cup Milk

Step 2

Stir together the Bisquick and milk until a soft dough forms. Turn dough out onto a surface sprinkled with a little additional Bisquick. Knead 10 times.

Step 3

Roll dough out into a 9x6-inch rectangle roughly 1/2 inch thick. Cut dough into 6 (3-inch) squares. Place on ungreased baking sheet. Bake for 8-10 minutes or until golden brown.

Step 4

Remove biscuits to a cooling rack and allow to cool a bit.


  • 3 tablespoons Unsalted Butter
  • 1 cup Onion, diced
  • 2 Carrots, peeled and diced
  • 1 12 stalks Celery, diced
  • 14 teaspoon Salt
  • 34 teaspoon Black Pepper

Step 5

Melt butter in a 10-inch heavy skillet over medium heat. Add onions, carrots, celery, salt and pepper. Cook, stirring occasionally, until vegetables have softened.


  • 2 tablespoons All-Purpose Flour

Step 6

Sprinkle flour over softened vegetables and cook, stirring, 1 minute.


  • 1 34 cups Chicken Stock, preferably one lower in sodium
  • 12 teaspoon Fresh Thyme Leaves, chopped (could substitute 1/4 tsp dried)

Step 7

Stir in chicken stock and thyme and bring to a boil, stirring, then boil over moderate heat, stirring occasionally, for 2 minutes.


  • 12 cup Half and Half
  • 3 cups Cooked Chicken, use a rotisserie chicken or bake your own

Step 8

Break chicken apart into pieces. Add half-and-half and chicken to the skillet and gently simmer until chicken is heated through.


  • 12 teaspoon Fresh Lemon Juice

Step 9

Stir in lemon juice.

Step 10

Spoon chicken mixture over biscuits and serve!
