Olla De Carne

  • 2 tablespoons Vegetable Oil
  • 1 Onion, quartered
  • 2 cloves Garlic, minced
  • 2 Celery Sticks, cut

Step 1

Heat oil in the bottom of a deep pot, saute onions, garlic and celery until translucent.


  • 1 pound Beef Short Rib, trimmed of excess fat
  • 1 pound Beef Stew Meat
  • 3 quarts Water or Stock
  • 1 tablespoon Dried Oregano
  • 1 tablespoon Dried Thyme

Step 2

Add in the meat and water, bring to a boil over medium-high heat. Add herbs then reduce to low and simmer for 1 hour to 1 1/2 hours, or until the meat is starting to get tender.


  • 1 pound Boiling Potato, cut into chunks
  • 1 pound Sweet Potato, peeled and cut into chunks
  • 2 Green Plantains, peeled and cut into chunks
  • 3 Carrots, cut into 1 inch rounds
  • 3 Corn on the Cobs, cut into 2 inch pieces
  • Salt and Pepper

Step 3

Skim off any excess fat from the top of the simmering broth, then stir in vegetables and season with salt and pepper. Continue to simmer for another 30 minutes or so until all the veggies are cooked through but not falling apart. Adjust seasoning to taste.

Step 4

Remove the meat and veggies to a warm platter and strain the broth. Sprinkle cilantro onto dish for garnish. Serve the meat and veggies with hot cooked gallo pinto and the broth in bowls.
