Outback Alice Springs Chicken

  • 12 cup Dijon Mustard
  • 12 cup Honey
  • 1 12 tablespoons Vegetable Oil
  • 12 teaspoon Lemon Juice

Step 1

Whip ingredients together, in a small bowl, for about 30 seconds.


  • 4 Boneless Skinless Chicken Breasts

Step 2

Pour about 2/3 of the marinade over chicken breasts, cover and marinate in refrigerator for about 2 hours. Chill the remaining marinade for later use.


  • 1 12 tablespoons Vegetable Oil

Step 3

Preheat oven to 375 degrees. On stove top, in oven proof frying pan, heat up vegetable oil. Sear chicken in pan for 3 to 4 minutes per side. Remove from heat.


  • 2 tablespoons Butter
  • 2 cups Sliced Mushrooms

Step 4

While chicken breasts are searing, saute the sliced mushrooms in butter.

Step 5

Brush each chicken breast with some of the reserved marinade. (NOT what the chicken marinated in). Set any leftover marinade aside to serve with the finished dish.


  • 1 dash Paprika

Step 6

Season the chicken breasts with Salt, Pepper, and Paprika.


  • 8 slices Bacon

Step 7

Place 2 strips, crosswise, over each breast. Top with sauteed mushroom slices.


  • 1 cup Shredded Monterey Jack Cheese
  • 1 cup Shredded Cheddar Cheese

Step 8

Cover each breast with 1/4 cup Monterey Jack, followed by 1/4 cup Cheddar.


  • 2 tablespoons Fresh Parsley, chopped

Step 9

Bake prepared breast for approx 7 to 10 minutes until cheese is melted and starts to bubble. Sprinkle breast with parsley before serving.
