Oven Baked Chicken Fajitas

Oven Baked Chicken Fajitas

Step 1

Preheat oven to 400 degrees F. Spray a 9x13 baking dish with cooking spray.


  • 2 tablespoons Vegetable Oil
  • 1 teaspoon Chili Powder
  • 1 teaspoon Chipotle Chili Powder
  • 2 teaspoons Ground Cumin
  • 12 teaspoon Garlic Powder
  • 12 teaspoon Dried Oregano
  • 14 teaspoon Salt

Step 2

In a small bowl, whisk together the oil, chili powder, chipotle chili powder, cumin, garlic powder, dried oregano and salt.


  • 1 pound Boneless Skinless Chicken Breast, cut into thin strips
  • 15 ounces Rotel Diced Tomatoes with Green Chilies, choose mild or hot depending on how spicey you like things

Step 3

Place chicken strips into a large, re-sealable plastic bag. Drain the Rotel tomatoes Add the tomatoes and the oil and spice mixture to the chicken bag. Seal bag and smoosh around to coat chicken with the mixture. Dump mixture into prepared baking dish.


  • 1 medium Onion, sliced into half moons and separated
  • 1 large Bell Pepper, seeded and sliced; i use 1/2 green pepper and 1/2 red pepper

Step 4

Place onion and pepper slices into the now empty chicken bag. Shake to coat with any remaining spice mixture and add to baking dish. Stir to combine peppers and chicken.

Step 5

Bake uncovered for 20-25 minutes or until chicken is cooked through (165 degrees F) and the vegetables are crisp tender and just starting to brown a little at the edges.


  • 12 Tortillas, flour or corn
  • Shredded Cheddar Cheese, optional
  • Sour Cream, optional
  • Guacamole, optional

Step 6

Serve with warmed tortillas and toppings of your choice.
