Oven-Crisp Potato Wedges

This low-fat, healthy dish satisfies that craving for crisp-on-the-outside, tender-on-the-insde potatoes with out deep frying. they're just as fast as frozen fries, so there's no reason not to have fresh!



  • 1 tablespoon Olive Oil
  • 1 12 pounds Red Potato, small, dollar stretcher tip: any potatoes you have on hand even large baking potatoes can be used in this recipe. the key is cutting them into small, uniform pieces so they'll bake evenly in just 20 minutes.

Step 1

Preheat oven to 525 degrees. Quarter potatoes and place in large bowl. Drizzle olive oil over potatoes and toss.


  • 4 teaspoons Minced Garlic, finely minced
  • 34 teaspoon Coarse Salt
  • 12 teaspoon Paprika
  • 14 teaspoon Freshly Ground Pepper

Step 2

Sprinkle garlic, salt, paprika and pepper over potatoes; toss to coat well.

Step 3

Line a baking sheet with foil and lightly spray with vegetable cooking spray. Arrange potatoes on prepared baking sheet. Roast for 20 mins stirring once or twice during cooking.

Step 4

Raise heat to broil. Broil potatoes until crisp, watching closely not to over-brown, about 1-2 mins.
