Oven Fried Chicken

Corn cereal crumbs and crushed crackers create a delicious coating. The yogurt tenderizes the chicken. A light spray of olive oil before baking guarantees lightly crispy results.



Step 1

Preheat oven to 375 degrees F. Lightly spray a rimmed baking sheet with cooking spray.


  • 20 Saltine Crackers, whole-grain
  • 2 12 cups Corn Flakes Cereal

Step 2

Combine crackers and Corn Flakes in a food processor and pulse until fine crumbs. Should have around a cup. Pour mixture into a shallow bowl.


  • 2 tablespoons Sesame Seeds
  • 34 teaspoon Cayenne Pepper, or less
  • 12 teaspoon Garlic Powder

Step 3

Add sesame seeds, cayenne pepper and garlic powder to the crumb mixture. Stir to combine and set aside.


  • 2 Egg Whites
  • 1 cup Plain Yogurt, low-fat
  • 1 tablespoon Dijon Mustard
  • 12 teaspoon Kosher Salt

Step 4

Whisk together the egg whites, yogurt, dijon mustard and salt. Pour into a large freezer bag.


  • 8 Chicken Thighs, bone-in and skin removed

Step 5

Add chicken to bag with yogurt mixture. Seal and shake to evenly coat chicken.

Step 6

One at a time, dip the chicken pieces in the cracker/cereal mixture, packing the crumbs onto the chicken. Place chicken pieces on prepared baking sheet.


  • Olive Oil Cooking Spray

Step 7

Spray chicken pieces lightly with the cooking spray. Bake for 45-50 minutes or until juices run clear. The internal temperature should read 165 degrees F.
