P Peanut Tofu Buddha Bowl

Directions

Ingredients

  • 1 pound Extra Firm Tofu

Step 1

Preheat the oven to 375 degrees F. Cube tofu and place in a single layer on a non-stick baking sheet, spray with cooking spray and cook until starts to brown.

  • 2 tablespoons Sesame Oil
  • 14 cup Soy Sauce
  • 2 tablespoons Maple Syrup, adjust to taste
  • 1 teaspoon Ginger Garlic Paste
  • 1 teaspoon Sriracha, adjust to taste
  • 14 cup Peanut Butter

Step 2

Whisk together the ingredients for the sauce until creamy and smooth.

Ingredients

  • 2 cups Broccoli Florettes, steamed or roasted

Step 3

Toss the broccoli with 1 teaspoon sesame or olive oil and a pinch of salt and pepper. Place in the oven and roast for 20 minutes until just tender.

Ingredients

  • 2 cups Cooked Brown Rice
  • 1 cup Shredded Carrots
  • 2 cups Spinach Leaves
  • Scallion, sliced

Step 4

To assemble, divide the brown rice among bowls, top each bowl with shredded carrots,spinach leaves, broccoli, and tofu. Dress with peanut sauce. Top with scallions.
