Panfried Grit Cakes

A nice accompaniment for any Southern inspired entree. Especially nice with Broiled trout or grilled white shrimp. Also a great breakfast item.

Directions

Ingredients

  • 12 teaspoon Salt
  • 2 cups Water
  • 12 cup Grits, Stone Ground
  • 1 clove Garlic, Peeled and chopped.
  • 12 cup Slab Bacon, Cut into bits and fry till brown and crispy. Remove from grease and drain.
  • 12 small Onion, chopped fine

Step 1

Bring water with salt to a boil. Add grits. Stir in bacon, onion and garlic. Cook according to directions on grit package.

Ingredients

  • 2 tablespoons Heavy Cream
  • 3 Scallions, Chopped
  • 1 teaspoon Salt, and cracked pepper corns, To taste.

Step 2

When grits are done cooking, remove from heat. Slowly stir in 3 chopped scallions and seasoning using the heavy cream to incorporate the ingredients.
 

Step 3

Bring entire mixture to a boil and reduce to simmer until the cream is absorbed and the grits thicken up. You will be forming patties next so make sure the texture is similar to cookie dough.
 

Step 4

Heat Peanut oil to 350 degrees farenheit.
 

Step 5

Form 2 inch balls from the grits mixture. Gently flatten to form a patty. Place in frying oil for approximately 3 minutes per side till crispy golden brown.
 

Step 6

Remove from frying pan and drain on papertowels. Serve hot for best results. Makes a great alternative to hash browns.
