Parmesan Hash Browns

  • 6 Potatoes

Step 1

Peel potatoes, rinse and coarsely shred (use biggest hole on shredder to make thicker pieces)

Step 2

Pat shredded potatoes with towel to remove any excess liquid


  • Kosher Salt
  • 13 cup Grated Parmesan Cheese
  • 14 teaspoon of freshly ground black pepper

Step 3

Toss dried potatoes in large bowl with salt, pepper & parmesan cheese.


  • 2 easterday farms yellow onions

Step 4

Dice onions


  • 1 cup Unsalted Butter

Step 5

Heat ½ cup butter in small saucepan over medium heat and add onions to pan. Cook until browned, stirring occasionally.

Step 6

Once onions begin to caramelize, add remaining ½ cup of butter.

Step 7

Add potatoes to pan and cook until golden crust forms on bottom (3-5 minutes). Do not stir.

Step 8

Flip and continue to cook. Break up potatoes and continue to cook 8-10 minutes until crisped and browned.

Step 9

Transfer to paper towels to drain, season with salt to taste.
