Parmesan Mushrooms

Healthy side dish or appetizer. Great for parties!



  • 3 pounds Fresh Whole White Mushrooms, large

Step 1

Remove mushroom stems.


  • 6 tablespoons Extra Virgin Olive Oil

Step 2

Roll mushrooms in oil and broil (caps right side up) for 6-8 minutes until tender.


  • 2 cups Red Bell Pepper, finely chopped
  • 34 cup Scallion, finely chopped
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Dried Ground Oregano

Step 3

Chop the mushroom stems and add to the onions and bell pepper. Add garlic powder and oregano; saute in oil for 4 mins.


  • 1 tablespoon Red Wine

Step 4

Add wine and saute for another minute.


  • 14 cup Dijon Mustard
  • 12 cup Nonfat Mayonnaise

Step 5

Add mayonnaise and mustard. Stir mixture well, and spoon 1 tsp into each mushroom cap.


  • 4 tablespoons Grated Parmesan

Step 6

Sprinkle with cheese and broil until brown.
