Parmesan Roasted Asparagus

Step 1

Preheat oven to 300 degrees


  • 2 pounds Asparagus, Fresh, about 30 large

Step 2

If the asparagus stalks are thick, peel the bottom half of each.


  • 1 pinch Salt, to taste
  • 1 pinch Fine Ground Black Pepper, to taste

Step 3

Lay them in a single layer on a sheet pan and drizzle with olive oil. Sprinkle with salt and pepper.

Step 4

Roast for 15-20 minutes, until tender.


  • 1 cup Parmesan Cheese, Freshly grated
  • 2 Lemons, Cut in wedges

Step 5

Sprinkle with the Parmesan and return to the oven for another minute. Serve with lemon wedges.
