Pasta Fagioli

White and red beans, ground beef, tomatoes and pasta in a savory broth.



  • 1 pound Ground Beef

Step 1

Brown ground beef in large saucepan over medium heat. Drain most of the fat.


  • 1 cup Onion, diced
  • 1 cup Carrot, julienned
  • 1 cup Celery, chopped
  • 2 Garlic Cloves, minced

Step 2

Add onion, carrot, celery and garlic. Saute for 10 minutes.


  • 29 ounces Diced Tomatoes
  • 15 ounces Kidney Beans, with liquid
  • 15 ounces Great Northern Beans, with liquid
  • 15 ounces Tomato Sauce
  • 12 ounces V8
  • 1 tablespoon White Wine Vinegar
  • 1 12 teaspoons Salt
  • 1 teaspoon Fresh Basil Leaves
  • 1 teaspoon Oregano
  • 12 teaspoon Pepper
  • 12 teaspoon Fresh Thyme

Step 3

Add remaining ingredients, except pasta. Simmer for 1 hour.


  • 12 pound Ditalini Pasta

Step 4

About 50 minutes into simmering, cook pasta in 1-1/2 to 2 cups boiling water over high heat. Cook for 10 minutes or until pasta is al dente. Drain.

Step 5

Add pasta to large pot of soup. Let simmer for 5 to 10 more minutes. Serve.
