Pasta with Sun-Dried Tomatoes

Great summer salad.



  • 1 pound Tomato, Ripe. medium diced.
  • 1 cup Kalamata Olives, pitted, diced
  • 1 pound Fresh Mozzarella, medium diced
  • 15 Sun-Dried Tomato, drained, chopped

Step 1

In a bowl combine tomatoes, olives, mozzarella, and chopped sun dried tomatoes.


  • 1 pound Fusilli (Corkscrew) Pasta

Step 2

Cook pasta. Cool. Mix with other ingredients


  • 5 Sun-Dried Tomato, drained
  • 2 tablespoons Red Wine Vinegar
  • 6 tablespoons Extra Virgin Olive Oil
  • 1 clove Garlic
  • 1 teaspoon Capers, drained
  • 2 teaspoons Kosher Salt
  • 3 teaspoons Fine Ground Black Pepper

Step 3

Make the Sauce. Combine sun-dried tomatoes, vinegar, olive oil, garlic, capers, salt and pepper in a food processor until smooth. Pour over pasta.


  • 1 cup Parmesan Cheese, fresh grated
  • 1 cup Fresh Basil, julienned
