Pea Soup

Good hot or cold. Fresh or frozen pea's work equally well

Directions

Ingredients

  • 2 tablespoons Unsalted Butter
  • 2 cups Leek, Chopped. White and light green parts (about 2 leeks)
  • 1 cup Yellow Onion, Chopped

Step 1

Heat the butter in a large saucepan, add the leeks and onions. Cook over medium low heat for 5-10 minutes until the onion is tender.

  • 4 cups Chicken Broth

Step 2

Add Chicken Stock. Bring to a boil

Ingredients

  • 5 cups Frozen Peas, (2 10. oz bags)

Step 3

Add the pea's and cook until tender. Frozen Pea's will take only 3 minutes.

Ingredients

  • 2 cups Fresh Mint, chopped
  • 2 teaspoons Kosher Salt
  • 1 teaspoon Fine Ground Black Pepper

Step 4

Off heat add mint, salt and pepper

Ingredients

  • 1 cup Creme Fraiche

Step 5

Puree soup in batches, on low speed. Whisk in the creme fraiche and chives nad taste for seasoning.
