Pesto Pasta Salad

Fresh pasta salad making use of all those cherry tomatoes that are so plentiful right now.

Ingredients

  • 4 Rotini (Spiral) Pasta, Cooked per package instructions. Make sure water is salted. Cook firm

Step 1

Cook pasta per package instructions to al dente and salt the water at least 1/2 tsp per quart.

Ingredients

  • 1 cup Basil Pesto
  • 2 tablespoons Green Olives, chopped
  • 1 cup Frozen Peas
  • 12 ounces Red Cherry Tomato, halved
  • 3 tablespoons Fresh Basil, coarsley chopped
  • 1 tablespoon Olive Oil

Step 2

Put pasta in a big bowl. Mix in basil pesto, green olives and optionally pine nuts. Gently mix in cherry tomatoes, peas, fresh basil leaves and olive oil. Salt and pepper to taste. Chill or serve at room temperature.
