Pickled Red Onions

Yet another winning taco garnish.



  • 1 12 pounds Red Onion, Cut into thin strips
  • 1 12 teaspoons Salt
  • 12 teaspoon Dried Whole Oregano

Step 1

Toss onions and spices in a mixing bowl, then pack into a large glass jar with a tight-fitting lid.


  • 12 cup Apple Cider Vinegar
  • 1 cup Fresh Squeezed Lime Juice, approx.
  • 1 Habanero Pepper, slit down one side
  • 2 Whole Cloves

Step 2

Pour vinegar over the onions, then add enough lime juice to cover completely. Press the onions into the liquid if necessary. Add habanero and cloves, close tightly, and refrigerate overnight or up to one week.

Step 3

Serve on tacos, nachos, pizza, with scrambled eggs, or just eat as a snack.
