Pinto Beans with Bacon and Onion

The second-best beans I've ever had.



  • 6 strips Bacon, cut into 1/2" dice
  • 1 medium White Onion, finely chopped

Step 1

Cook the bacon in a large pot until crisp, 6 minutes or so. Add onion and cook until soft, about 4 minutes.


  • 1 pound Dried Pinto Beans, rinsed and picked through for stones
  • 1 teaspoon Ground Cumin
  • 6 cloves Garlic, crushed and left whole

Step 2

Add the garlic, cumin, and beans to the pot and cover with 10 cups of water. Bring to a boil than simmer, uncovered for 1 hour or until beans are beginning to become tender.


  • 2 teaspoons Salt
  • 1 Canned Whole Chipotle Peppers, diced

Step 3

Stir in the salt and chipotle pepper and simmer until beans are tender, about 45 minutes. While simmering, monitor the liquid level and add more water if needed to cover the beans.

Step 4

Serve with tacos, over nachos, or as a side dish.
