Poached Eggs in Tomato Sauce

This is a breakfast that I find myself insatiably craving every few weekends or so.



  • 1 cup Tomato Sauce, use your favorite. Newman's is good for store-bought, or use leftovers from you favorite recipe.
  • 2 Eggs

Step 1

In a small saucepan, heat the tomato sauce to a simmer, then reduce heat to medium-low. Carefully crack eggs into sauce, leaving them as whole as possible and on opposite sides of the pan. Season egg tops with a tiny pinch of salt and some pepper. Simmer eggs in sauce until whites are firm and yolk is desired doneness. I like mine thick but not quite hard-cooked, which takes about ten minutes. Serve over slices of toast or hash browns with a big scoop of tomato sauce.
