Poblano And Chicken Soup

  • 1 cup Onion, diced
  • 3 Poblano Peppers, chopped
  • 5 cloves Garlic
  • 2 cups Cauliflower, diced
  • 1 12 pounds Chicken Breast, cut into large chunks
  • 14 cup Fresh Cilantro, chopped
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Salt
  • 2 cups Water

Step 1

Put it all in the instant pot. lock lid in place. set to pressure cook, high. Cook for 15 minutes. When cooking is complete, let depressurize naturally for 10 minutes, then release remaining pressure.

Step 2

Remove the chicken and reserve on a plate.

Step 3

Tilting the pot use an immersion blender to roughly puree the vege mixture. It should be slightly chunky.


  • 2 ounces Cream Cheese, small chunks

Step 4

Turn instant pot to saute and set to high heat. when broth is hot and bubbling, add cream cheese and stir until it melts. Use a whisk to blend in cream cheese if needed.


  • 1 cup Sour Cream

Step 5

Shred the checken and stir back into the pot. Once it is heated therough, serve, topped with sour cream.
