Pork and Chive Dumplings

Chef Kim's legendary dumplings from her restaurant the Good Fork in New York



  • 2 tablespoons Canola Oil
  • 1 cup Onion, diced
  • 3 tablespoons Minced Garlic
  • 2 tablespoons Fresh Ginger, minced
  • 1 cup Chinese (Garlic) Chives
  • 1 Egg, beaten and reserved in a small bowl

Step 1

In a pan, heat the canola oil over medium heat. Add onions, garlic, chives and cook for 8 minutes. Season with salt and pepper and let cool.


  • 1 12 pounds Ground Pork
  • 8 ounces Firm Tofu, 1 small package
  • 3 tablespoons Hoisin Sauce

Step 2

In a large bowl, combine pork, tofu, and hoisin sauce with chive mixture.

Step 3

Test-fry a small portion of the pork mixture and adjust seasoning.


  • 1 package Dumpling Wrappers

Step 4

Holding dumpling wrapper flour side down, place a teaspoonful of pork mixture onto the middle of the wrapper.

Step 5

Dip you index finger into the beaten egg and run it over half of the outer edge of the dumpling.

Step 6

Fold dumpling in half, crimping it in the middle and sealing along the egg-moistened edge, taking care not to leave any air pockets.

Step 7

Repeat procedure and pan-fry the dumplings until crisp and brown on both sides.

Step 8

Serve with a combination of soy sauce and rice-wine vinegar to dip
