Portobello Mushroom Ragu

We ate this over noodles, but you can top rice or tortillas with it too!

Directions

Ingredients

  • 2 tablespoons Olive Oil
  • 1 medium Red Onion, diced

Step 1

Sautee onions in heated oil in large skillet, stirring often about 3-4 minutes.

Ingredients

  • 2 Garlic, peeled, pressed, or minced
  • 12 ounces Fresh Portabella Mushrooms, cleaned, trimmed, and diced
  • 12 teaspoon Dried Thyme

Step 2

Add the garlic and sautee for another minute or two. Stir in the mushrooms and thyme. Cook over high heat until mushrooms are soft, 2-3 minutes longer.

Ingredients

  • 15 ounces Canned Chopped Tomatoes, or two cups plus tomatoes
  • Ground Black Pepper
  • Sea Salt

Step 3

Add tomatoes and cook about ten minutes until the mixture is thick. Serve over wheat berries, noodles, bulgar wheat pilf, etc.
