Diced Potatoes with garlic, onions, and bacon served with eggs over-easy

Directions

Ingredients

  • 5 Red Skin Potatoes
  • 12 head Garlic
  • 3 tablespoons Olive Oil

Step 1

Dice potatoes & garlic, then place items in skillet with 3 tbs of olive oil. Mix together, simmer covered on Med heat

Ingredients

  • 1 Onion
  • 6 slices Bacon

Step 2

Dice onion and bacon. In a separate skillet heat bacon until grease is present, then add onions. Cover and simmer on med heat until texture meets preference.

  • 1 tablespoon Fresh Sweet Basil
  • 12 tablespoon Black Pepper

Step 3

Add bacon and onions to potatoes & garlic once the potatoes are close to a slightly crunchy crust. Add sweet basil and black pepper.

  • 8 Eggs
  • 3 Olive Oil
  •   Black Pepper

Step 4

In the skillet the bacon was cooked in add eggs two to three at a time to cook over-easy in the bacon grease, add olive oil as needed to maintain moisture. Pepper to taste.
