A delicious quiche made of duck eggs, a sausage-flavored crust, and a crunchy potato topping!

Directions

Step 1

Preheat oven to 350 degrees.

Ingredients

  • 12 pound Ground Pork
  • 3 tablespoons Bread Crumbs
  • 14 teaspoon Dried Thyme
  • 14 teaspoon Dried Parsley Flakes
  • 14 teaspoon Crushed Red Pepper Flakes
  • 14 teaspoon Dried Rubbed Sage
  • 14 teaspoon Ground Coriander
  • 14 teaspoon Ground Black Pepper
  • 12 teaspoon Kosher Salt

Step 2

Combine pork, spices, and bread crumbs.

Step 3

Press pork mixture into a 9" cast iron pan (or similar sized pie pan) to form the crust with a uniform thickness, between 1/4" and 1/2".

Ingredients

  • 3 Duck Eggs, (optional: 4 large chicken eggs)
  • 12 cup Shredded Mozzarella Cheese, or any other, your preference
  • 2 tablespoons Butter, melted
  • 14 cup Milk
  • 2 tablespoons Flour
  • 1 pinch Kosher Salt

Step 4

Whisk together eggs, cheese, butter, milk, and flour. Pour mixture into pan with meat crust.

Step 5

Cover with aluminum foil and bake for 20 minutes, or until egg mixture feels somewhat firm.

Ingredients

  • 14 cup Shredded Mozzarella Cheese, or any other, your preference
  • 2 cups Frozen Tater Tots, defrosted and crumbled
  • 1 tablespoon Butter, melted

Step 6

Combine defrosted and crumbled tater tots with butter. Spread over the top of quiche, sprinkle with shredded mozzarella.

Step 7

Increase temperature to 400 degrees. Return pan to oven, uncovered, and bake for 10 minutes or until the top has begun to brown.

Ingredients

  • 4 tablespoons Sour Cream

Step 8

Remove from oven and carefully tip the pan to pour off fat. Allow to cool. Cut into slices and serve with a dollop of sour cream.
