Rainbow Fruit Salad With Dip/Dressing

Dip/Dressing options - puree in a blender or food processor and serve on or with fruit salad:

1/2 papaya + 1/4 cup orange juice + 1/4 tsp nutmeg

1 persimmon + 1 banana

1 banana + 1/2 cup strawberries

1/2 cup fresh orange or apple juice + 6-8 pitted dates

1/2 cup pineapple cubes + 1 banana

Blend 1/4 cup cashews with 3/4 cup orange juice until completely smooth. Then add 4 fresh or frozen apricots and a dash of nutmeg to taste.

1 fresh or frozen banana + 1/4-1/2 orange juice or raisin water (from soaking raisins) + 1 fresh or frozen peach + dash of nutmeg + dash of cardamom.



  • 2 Oranges, peeled and sliced across the sections
  • 2 cups Strawberries, sliced
  • 2 large Kiwi, peeled & sliced
  • 1 small Banana, peeled & sliced
  • 1 tablespoon Currants, (or 1/4 cup blueberries)

Step 1

On a small platter, make a bed of orange wheels. Toss together remaining fruits or layer on top of oranges. Serve topped with fruit dip, or serve dip on the side. Serves 2.
